Roman cuisine is one of my favourites in Italy! It's the best expressions of Italian comfort food - great pecorino romano cheese, guanciale and tomatoes.
And by the way, did you know Fettucine Alfredo is a Roman dish? I used to think it was Amercian because of the cream people use here, but if you make it with just butter and parmigiano, that's how they do it in the Italian capital!
